Bai Ji Guan, or "White Cock's Comb", is one of the original four famous Wuyi oolong varietals, and is the most lightly roasted. Earning its name from its pale green leaves, which stick up like rolling rooster crests, Bai Ji Guan has been cultivated since the Ming dynasty. Another origin story is commonly told that a monk was meditating outside of Bat Cave in Wuyi, where he witnessed a rooster sacrifice his life to save a baby chick from a marauding hawk. The monk buried the rooster, and returned a year later to find the Bai Ji Guan bush growing from the grave. This story is good for describing the light nature of the tea, with an essence that feels clean and pure. The minerality is smooth and integrated; stone fruits merge with a granite finish, followed by a warming of the throat. Light hearted and easy going, but also intricate and robust.
