Dong Ding is among the most popular varieties of tea produced in Taiwan. The commonly told story is that, in 1855, the scholar Lin Feng Chi sourced twenty-four Qinxin, "Green Heart", plants from the Wuyi region in China. He planted them on Dong Ding Mountain, which is a plateau with an elevation of 1,000 meters. It should be noted, however, that the Tea Research and Extension Center is recorded to have developed Qingxin from seed in 1918. Whichever is true, Dong Ding grown and processed oolong is exceptional.

The most prominent tea in Taiwan, until high altitude plantations began opening in places like Da Yu Ling and Lishan. Dong Ding still reigns as one of the most popular and sought after teas in Taiwan. Grown in one of the original Dong Ding producing villages, Feng Huang. The liquor is a golden red color, with a spicy, sweet aroma, and a flavor reminiscent of biscuits, cinnamon, and vanilla.
