Jin Jun Mei, "Golden Horse Eyebrow", is a new style of tea, developed by Liang Jun De and Yan Ye Feng in June, 2005, in Tong Mu Guan, Wuyishan. It is made using the same plants as Lapsang Souchong, but instead of using the robust larger leaves, only the smallest leaflets are collected. They are then baked, instead of smoked. The resulting flavor is honey and fruit, carried in a smooth, throat-coating liquor.
This honey style is oxidized longer than the floral style, to lull out a rounded, sweeter profile.
