Bai Hao Yi Zhen, "White Hair Silver Needle", is one of the earliest forms of white tea, developed in Fuding, during the 1700s, using the Da Bai cultivar. The original mother plant is still alive, planted in the granite rich soils outside of Hongzue Cave, Taimu Mountain, Ningde. Only the small, tender leaves are used, which are covered in white trichomes, which lend a soft, downy appearance. The brewed liquor is delicate and refined, with soft vegetal flavors and an ethereal aroma. Intricately nuanced notes of toasted nuts mingle with seaweed and green beans.
